SPIRITED WOMAN Q & A
SUSAN FENIGER
I
love to eat. My favorite is Mexican food, so spicy that my hair gets
even curlier. When I was a little girl, when my mother made a
particularly good meal (once a year) I would sing at the dinner table.
Last week, I went to one of my favorite restaurants in LA, Border
Grill. Every time I eat their delicious Mexican food - I sing. All
right, hum. On this last visit, the chef and co-owner Susan Feniger was
sitting at a nearby table. I couldn't miss this opportunity, so I
walked up to her and blurted something about Spirited Woman and then
said, "You're fantastically talented, I've been a huge fan for years,
can I interview you?" And graciously, to the woman who interrupted her
meal, she said yes.
Susan Feniger is a celebrity chef. No doubt about it. She and her decades-long chef/restaurant partner Mary Sue Milliken are "two gringas from the Midwest," who through an innovative, compelling cuisine style created a huge empire around food. The owners of three successful restaurants - Border Grill Santa Monica, Border Grill at the Mandalay Bay in Las Vegas, and Ciudad in Los Angeles - for many years, they were also the star chefs on the Food Network's popular "Too Hot Tamales" TV show. Together, they've co-authored five cookbooks, had their own radio show, and presently they have the "Border Girls" line of prepared foods at Whole Foods Market. Whew.
But Susan and Mary Sue didn't start out this way. They met in the late 70's when they were the first two women to break into the all-male kitchen at Le Perroquet, one of Chicago's best French restaurants. Long story short, they both took a detour to cook in France, Susan returned to Los Angeles, opened the City Cafe on Melrose Avenue and convinced Mary Sue to move out and help her run it. That was almost 30 years ago - and from that first restaurant, where they cooked on a hibachi grill in the alley, they now have more than 300 employees and they plan to open more restaurants and write another book. Not bad, for two gringas!
Susan lives in a home in the Los Angeles canyons with her partner of 12 years, filmmaker writer Liz Lachman, their two dogs and three cats. When I interviewed Susan on the phone, what popped out about her is her unflappable enthusiasm. It is clear that she loves life. She loves food. She loves people. And if she had it her way she told me, she'd figure out a way where she didn't have to sleep. It is clear that Susan doesn't want to miss a moment.
On that note, or should I say, winning recipe, I urge you to read this delightful interview with master chef, person extraordinaire Susan Feniger.
Q. Was there an "aha" moment when you knew you wanted to be a chef?
A.
I don't think there was. My mother was a fantastic cook and my father
loved to eat. So it was a really good combination. My mother was one of
these people who would always, from the time I was a young kid, be
cooking and freezing things. Whenever people would come over, she'd
pull something out that she made, like cheese dreams appetizers - she
just had great taste buds. My mom had this way of making a salad and
she would taste it and add more seasoning and stuff to it - which I
thinks makes someone able to put out great food. I just had many
memories making fudge with her, and memories of my father late at night
going into the freezer pulling out fudge from colored cookie tins.
There was much about food in our home. Even when we opened City Cafe in
the early 80's - we barely had a kitchen, we didn't even have an oven
for the first couple years, and my mom sent us out these ice box cakes
she use to make with lady fingers - she and my dad wrapped them up in
dry ice and then we sold them at the cafe. Very sweet.
Q. Food in your family sounds like it was a form of communication and a form of being nurtured. Is that true?
A. Yes, and it is still. Honestly for me, it still is more about that
that anything. I still think what I connect to most about restaurants
and kitchen is more about the experience and nurturing and sharing
experiences and eating while you're sharing. More so than I do - isn't
this the most creative thing I've ever made? For me, going out to eat
is more about the experience. I love to have great food but honestly I
could have the same delicious salad every night with an artichoke and a
really fantastic steak and be with great company and hear fabulous
music. That would do it as much for me as going out for an interesting
dining experience somewhere new every night.
Q. You were formally trained at the Culinary Institute of America - how do you feel that training has influenced your career?
A.
I really embraced the learning. I was very focused. I was always
focused even as a kid. Driven. When I was very young I thought I
wanted to be a professional tennis player and so in the summertime I
would go at 7 in the morning to the courts and stay there until 5 at
night. Then at some point I realized I wasn't going to be a
good tennis player. When I was in college I was focused on being an
economist - that is what I thought I wanted to do. I worked in
restaurants while studying economics. In my first two and a half years
of
college I finished all my major requirements and I convinced my
economics professor to let me do my last year as an
independent study at the CIA in New York. The reason I decided to do it
was I had been working in a kitchen and there was this guy named Perry,
and he had been in the army, and he is the one who really inspired me
to make it my career. I just hadn't thought of it as a career, but as
soon as I started the CIA I knew this is what I wanted
to do. Absolutely no question.
Q.
When you originally partnered with Mary Sue - what were your dreams?
Did you both dream of such success - was it part of a master plan? What
were your goals?
A. There was no master plan. We met in a
Chicago restaurant, where we were the only two women working in the
kitchen, and the chef was really just a total jerk to me. In the
afternoon I'd be almost in tears and she'd be saying stick it out. It
was a great restaurant - it was called Le Perroquet. It turned out many
years later that I'm sure why he was on me was because I had come out.
I was openly gay and he was married with kids, and he eventually came
out. I stuck it out for almost a year and a half, then I moved to LA. I
worked at Ma Maison under Wolf, before he opened Spago, for two years,
and he encouraged me to go to France and I got a job in a three star
restaurant. I kept in touch with Mary Sue in Chicago, and it turned out
she was headed over to Paris at the same time. We just decided one
night over a couple bottles of wine that we were going to open up a
restaurant together. We didn't have any money or anything. We had
looked at all the different cities in our minds. The owners of LA
Eyeworks wanted to do a little cafe. I became a partner and convinced
Mary Sue six months later to help me run it. We had a hot plate, and I
put a hibachi in the parking lot - this is after I'd come from a three
star restaurant in the South of France. We hand wrote the menu. It was
just Mary Sue and I in the kitchen and we did that for five years. Then
in 1985 we opened City on La Brea. There was no plan.
Q. At this point in your career you're just as much a renowned chef
as a successful entrepreneur - overseeing more than 300 employees and
your own "Border Girls" brand at Whole Foods Market - how do you do it?
Do you work non-stop? Have you learned to delegate?
A. I do
delegate, but a lot of the stuff I do is more than operational it is
connecting with customers, with staff, with employees. My day is mainly
made up where I go into the restaurant, or I might have an interview
like this, or a photo shoot, or a TV show, but then I go to the
restaurants and I connect with all the employees. Our corporate office
is in the Union Bank, but I made the decision that I didn't want to be
there, so I cleared out a little tiny storeroom at Ciudad and put my
office at the back of the kitchen. Because I like to be really hands on
and in the mix. I'm sitting there with my door open and the prep guy is
right outside my door. I can walk out there, say hello to everyone,
taste all the food at lunch, I might have a phone meeting, then I can
walk out during service, say hello to 150 customers, make the
connection, come back in, watch food going out, then go back into a
meeting.
Q. What advice would you give another woman setting out to
open her own restaurant? What characteristic best describes you as a
restaurateur?
A. What makes it all work for me is that I love
to eat, I love to cook. I also really love the pressure of restaurants.
You have to be able to handle pressure well. We could have 300
reservations, an employee who walks out, the toilet could be
over-flowing, I could have an interview - that stuff doesn't throw me.
You have to be able to handle and juggle a lot of things. Also, my
temperament is right for the restaurant business because I want people
to be happy, to have a great time, to feel taken care of. I have a
pretty open door and I am accessible and people feel they can connect
to me so it makes them loyal. They feel respected and that works in the
restaurant business because it is all about people. Unless you really
commit a huge amount of time to it, I just don't see how you can do it.
For me, a 50 hour week is a short week.
Q. Susan, why do you feel that you are a spirited woman?
A.
I try to live every moment. When I was in college I tried to see if I
could do an experiment where I could only sleep three hours. And I
still, I don't want to go to bed ever. I love it when I wake up at 5, I
love those few hours before it feels like everyone is up. And I love it
late. I think I have a spirit about life that is - I'm curious and
excited and I'm pretty content and I feel like I am someone who
embraces challenges and I feel as though I am pretty open and
self-searching. It sounds like I'm a big egotistical asshole - doesn't
it? But, I think I have a really alive spirit.

The same applies to photos and a JPEG (no larger than 200 pixels) is required.
All past SPIRITED WOMAN WORKSHOP attendees receive ONE FREE 60-word listing EACH MONTH. To ad a photo it costs $15 monthly. All additional listing are $25 per item per month, and with photo $40 per month.
For those of you who have NOT attended the SPIRITED WOMAN WORKSHOP it cost $25 per listing per month or $40 with photo. Please follow the above instructions.
